Apricot Almond Bites

Here's a quick, energizing dessert that's really yummy and nutritious. Make a batch and store it in the fridge so it helps you take care of those cravings.


Pitted dates 1/2 Cup (8 tbs)
Unsalted almonds 1/2 Cup (8 tbs)
Dried apricots 1/2 Cup (8 tbs)
Coconut oil 1 Tablespoon



1. Combine dates and almonds in a food processor and blend for about 5 minutes until the mixture becomes sticky.

2. Add the apricots and coconut oil. Process until oil is well blended and apricots finely chopped.

3. Form tablespoon sized balls and transfer to a container. 

4. Store in an air tight container in the fridge.
