Pork Stuffed Baked Apples

Tart apples 2 Pound (8 Apples, 1/4 Pound Each)
Lemon juice 2 Tablespoon
Hot beef broth 1 1/4 Cup (20 tbs)
Salt To Taste
For stuffing
Margarine/Butter 1/4 Cup (4 tbs)
Onion 1 , grated
Pork sausage meat 1/2 Pound
Soft white bread crumbs 1/2 Cup (8 tbs)
Dried sage 1 Teaspoon
Lemon 1 , rind grated finely
Ground nutmeg 1 1/2 Pinch
Pepper To Taste



1) Preheat oven to temperature of 400 degrees.


2) To prepare the stuffing, in a saucepan, melt half of the margarine and add the onion. Gently cook for about 5 minutes.

3) Into a bowl, tip the cooked onion.

4) In the saucepan, melt the remaining margarine and add the sausage meat. Cook over medium heat, stirring with the help of a wooden spoon in order to remove any lumps, till the meat is evenly browned.

5) With the help of a slotted spoon, remove the sausage meat and add it to the bowl with the onion.

6) Add the sage, bread crumbs and lemon rind and stir well. Season with nutmeg and pepper to taste.

7) With the help of a sharp knife, core each apple to within ½-inch of the base. Widen each created hole to 1 ½-inches and cut the skin around each of the holes in order to prevent the apples from bursting while they are cooking.

8) With the help of a spoon, fill the apples with the prepared stuffing, pressing it down well into every cavity.

9) In a heatproof dish, arrange the stuffed apples.

10) Into the hot broth, mix the lemon juice and season mixture to taste. Pour all around the apples.

11) Bake the apples, uncovered, in the preheated oven for about 35 minutes, till the apples are soft.


12) Transfer the hot apples to a warmed serving dish and serve right away. Serve the hot broth separately in a pitcher that has been warmed. Makes a good appetizer as well as side dish.
