Old Fashioned Apple and Cranberry Duff

Ingredients

For fruit
Granulated sugar 3/4 Cup (12 tbs)
Quick cooking tapioca
Apple cider 1 Cup (16 tbs)
Cranberries 1 Cup (16 tbs)
Applejack 2 Tablespoon (Apple Brandy)
Grated fresh ginger 1 Tablespoon
Lemon zest 1 , grated
Tart apples 1 , peeled, cored, and sliced (Macoun Or Northern Spy)
For topping
Egg yolks 2 Large
Granulated sugar 1/3 Cup (5.33 tbs)
Pure vanilla extract 1 Teaspoon
Egg whites 2 Large
All purpose flour
Confectioners sugar 1 1/2 Tablespoon (For Dusting)

Directions

GETTING READY

1. Start by preparing preheat the oven to 350° F and also butter a 2 1/2-quart baking dish

MAKING

2. In a large saucepan, combine sugar and tapioca and stir it in the apple cider,cook over mediium heat, till the sugar dissolves

3. In a saucepan, Now stir in the next 5 ingredeints and increase the heat to high, now boil it, decreaser the heat to a simmer, and cover and cook for aobut 4 minutes, till the apples become soft and tender

4. In a baking dish, spoon the fruit

5. Meanwhile prepare the topping, first take an electric mixer and use it to beat in the egg yolks and sugar for 3 to 4 minutes, until mixture become sthick and lemon colored

5. In another bowl, stir in the vanilla, and take another bowl, and in it beat the egg whites with an electric mixer until soft peaks form over the top, then place the whits and fold the flour into the whites and also fold the whites into the egg yolk and sugar mixture

6. Place the fruit on a surface, and pour the topping over, use a rubber spatula to spread it

7. Finally bake, uncovered, for 20 to 25 minutes until the topping is golden brown in color and starts pulling away from the sides of the pan

SERVING

8. Sprinkle with confectioners' sugar and serve warm with coffee
