Super Bowl: Carne Asada Fries

Here is my take on Carne Asada Fries. Some of the gourmet food trucks that roll around L.A. have taken the carne asada tacos and burritos to another level. This is just one way to get this dish going. Feel free to add some more of your favorite toppings.

Ingredients

For meat marinade
Fresh lime juice 1/4 Cup (4 tbs)
Fresh lemon juice 1/4 Cup (4 tbs)
Fresh orange juice 1/4 Cup (4 tbs)
Beer 1/3 Cup (5.33 tbs) (Mexican Lager Beer or Corona, Modelo, Dos Equis))
All purpose seasoning 1 Tablespoon (Grand Diamond All Purpose Seasoning)
Ground cumin 1 Teaspoon
Mexican oregano 1 Teaspoon
Onion 1/2 Small , sliced
Garlic 5 Clove (25 gm) , smashed
Extra virgin olive oil 2 Tablespoon
Other ingredients
Flap meat/Skirt steak 2 Pound
Kosher salt To Taste
Pepper To Taste
Seasoning 1 Tablespoon (Grand Diamond Seasoning)
Oil 1 Tablespoon (For greasing)
French fries 5 Pound , crinkle cut
Shredded cheese 3 Cup (48 tbs) (Monterey Jack, Pepper Jack, Cheddar)
Pico de gallo 3 Cup (48 tbs)
Salsa 3 Cup (48 tbs)
Guacamole 3 Cup (48 tbs)
Sour cream 2 Cup (32 tbs)

Directions

GETTING READY

1. In a large bowl, mix together all the ingredients for the marinade.

2. Pour the marinade in a resalable plastic bag. Next add the steak into the bag. Seal tightly. Massage and move the meat around the bag making sure all of the steak is being touched by the marinade. Marinate for 4 to 6 hours or overnight.

3. Preheat a grill pan (over medium-high heat.

MAKING

4. Remove the steak from the bag and cut it into even size pieces.

5. Season the steak with salt, pepper, and Grand Diamond Seasoning.

6. Grease the grill with some oil and place the meat on the grill and cook. Do not poke or smash the steak during the cooking process. For medium- 4 to 5 minutes on each side. For medium-well to well done- 6 to 8 minutes on each side.

7. Once the steak is done, allow it rest on a plate and be kept warm.

8. Cook the French fries according to the package direction.

9. Lastly, dice the steak into small cubes.

FINALIZING

10. Place the desired amount of French fries on a plate, top with 5 to 6 ounces of steak and cheese. Finish off with salsa, guacamole, and sour cream.

SERVING

11. Serve with some cold drink or chilled beer.
