Recipes For a Spooktacular Halloween Dinner Party

I love special occasions and I adore entertaining but I don't like to spend all my time in the kitchen while the action is going on outside. With that in mind, I've put together a fun, easy, and stress free menu for feartastic entertaining!

Ingredients

For sweet and salty caramel corn
Popped popcorn 10 Cup (160 tbs) (pop 1/3 cup of kernels in 1 tablespoon of oil)
Chopped toasted pecans 1 1/2 Cup (24 tbs)
Brown sugar 1 Cup (16 tbs)
Light corn syrup 1/4 Cup (4 tbs)
Creole spice To Taste
Vanilla extract 1 Teaspoon
Baking soda 1/2 Teaspoon
Kosher salt/Sea salt 1 1/2 Teaspoon
For screamtinis cocktail
Vodka 1 Ounce
Peach schnapps 1 Ounce
Fresh squeezed lemon juice 1 Tablespoon
Peach mango drink 1 Cup (16 tbs) (or other peach based juice)
Red food color 2 Drop
Yellow food color 2 Drop
For bloody caesar or mary martinis
Tomato juice/Clamato 3 Ounce
Worcestershire 1/4 Teaspoon (a splash)
Hot sauce 1/4 Teaspoon (a splash)
Olive juice 1/4 Teaspoon (a splash)
Celery salt 1 Pinch
Lemon juice To Taste (a squeeze)
For ghost potatoes
Russet potatoes 2 Pound
Butter/Roasted garlic butter 3 Tablespoon , cut into pieces
Milk 1/4 Cup (4 tbs)
Salt and pepper To Taste
Egg yolk 1 Large
Caraway seed/Bacon bits 2 Teaspoon
For chicken diablo
Boneless skinless chicken breast 4
Granny smith apples 2
Button mushroom 6 , chopped
Extra virgin olive oil 1 Teaspoon
Onion 1 Medium , diced
Salt 1/2 Teaspoon
Pepper 1/2 Teaspoon
Butter 1 Tablespoon
Barbecue sauce 1 Cup (16 tbs)
Bacon slices 8 (smoked applewood bacon)
For snickers bar squares
Butter 1/4 Cup (4 tbs)
Snickers bars 93 Gram , cut into 1
Rice krispies 3 Cup (48 tbs)

Directions

For Sweet and Salty Caramel Corn:

GETTING READY

1. Preheat oven to 200 degree F.

MAKING

2. In a medium saucepan melt brown sugar with corn syrup, Creole spice, vanilla, baking soda, and salt until light and smooth.

3. In a large bowl, combine popcorn and pecans. Mix well and pour the brown sugar mixture on top. Toss to coat well.

4. Spread the coated popcorn in a large rimmed baking sheet and pop in oven for 20-30 minutes or until dry to the touch. Remove from oven and cool completely.

SERVING

5. Serve with purple grapes and cheese.

For Screamtinis Cocktail:

GETTING READY

1. Place martini glasses in refrigerator to chill.

MAKING

2. In a shaker, pour vodka, peach schnapps, lemon juice, peach mango drink, red and yellow food color. Shake well.

SERVING

3. Pour in chilled martini glasses and serve immediately.

For Bloody Caesar or Mary Martinis:

GETTING READY

1. Place martini glasses in refrigerator to chill.

MAKING

2. In shaker, add vodka, tomato juice, Worcestershire, hot sauce, olive juice, salt, and lemon juice. Shake well.

SERVING

3. Pour in chilled martini glasses and serve.

For Ghost Potatoes:

GETTING READY

1. Preheat oven to 350 degree F.

MAKING

2. Boil potatoes until soft and tender.

3. In a large bowl, mash potatoes with butter, milk, salt, pepper, and egg yolk until fluffy with no lumps.

4. In a pastry or ziplock bag, transfer the mashed potato and cut hole into the tip and pipe little ghosts onto a parchment lined baking sheet. Make eyes using caraway seeds or bacon bits.

5. Bake in oven for 30-40 minutes or until golden and crispy on the outside.

SERVING

6. Serve with chicken Diablo (recipe follows) and enjoy!

TIPS

You can make these ahead of time, cover with plastic wrap and pop in refrigerator. Just bake and serve hot.

For Chicken Diablo:

GETTING READY

1. Preheat oven to 350 degree F.

2. In a pan saute mushroom, apple, and onion in olive oil and butter until onion becomes translucent and the mushroom losses their water. Remove from heat and let cool. Season with salt and pepper.

3. Butterfly chicken, pound thin and place equal amount of mushroom apple mixture on top. Roll and place seam side down on a baking sheet. Baste with barbecue sauce, cover and refrigerate for 2 hours.

MAKING

4. Cut each bacon slice in half and lay the four halves on a plate. Place the marinated chicken, seam side up on the bacon and bring the bacon up and around the chicken. Affix with toothpick.

5. Place the wrapped chicken on the foil lined baking sheet and brush it with the remaining barbecue sauce.

6. Pop in oven and bake for 45 minutes and then broil each side for about 1 minute or until bacon is crispy.

SERVING

7. Serve hot and enjoy!

For Snickers Bar Squares:

MAKING

1. In a large saucepan, melt butter and chocolate bars over low flame.

2. Add the rice krispies and stir to coat well.

3. Into a 13x9x2-inch parchment lined pan, transfer the mixture and press well using buttered spatula. Cut into 2-inch squares.

SERVING

4. Serve and enjoy!
