Easy Beef Fajitas

Fajitas can be a diabetes friendly food (just like most any food), and you can join Toby as she prepares this easy recipe to prove the point.

Ingredients

Beef 1 Pound (Top Round, Top Sirloin or London Broil)
Flour tortilla 8 Small
Lime wedges 8
Cilantro sprigs 4 , chopped
Picante sauce/Salsa 1 Cup (16 tbs)
For marinating beef
Fresh lime juice 2 Tablespoon
Olive oil/Vegetable oil 2 Teaspoon
Garlic cloves 2 Large , crushed

Directions

GETTING READY

1. In a Ziploc bag add in the olive oil, garlic and fresh lime juice. Add the beef and coat evenly, let it marinate for 20 minutes in the fridge.

MAKING

2. Take out the beef and place over a medium heat grill and cook for 7 – 8 minutes turning until desired doneness is obtained.

3. When meat is done, trim the visible fat and cut into thin strips across the grain.

4. Warm the tortillas on the grill or in microwave.

FINALIZING

5. Top the tortillas with meat, picante sauce, and cilantro and squeeze the lemon wedge.

SERVING

6. Serve with your favorite condiment.
