Betty's Cheddar Parmesan Cheese Grits

In this video, Betty demonstrates how to make Cheddar Parmesan Cheese Grits. Grits are a favorite food of the South, and this blend of cheeses makes a terrific dish!

Ingredients

Instant grits 2/3 Cup (10.67 tbs) (or regular grits)
Chicken broth 1 Cup (16 tbs)
Milk 1 Cup (16 tbs)
Salt 1/2 Teaspoon
Ground red pepper 1/4 Teaspoon (to taste)
Butter 1/4 Cup (4 tbs) , sliced (1/2 stick)
Shredded cheddar cheese 1 1/4 Cup (20 tbs)
Shredded parmesan cheese 1/2 Cup (8 tbs)
Eggs 1 Medium , beaten till pale
Cooking oil spray 2 Dash

Directions

GETTING READY

1. Preheat the oven to 350 degrees F.

2. Grease a baking dish with cooking spray. Set aside.

MAKING

3. In a pot add grits, chicken broth, milk, salt and pepper. Stir to mix well. Place it on medium-high heat and bring it to a boil.

4. Reduce the heat to low and continue to cook for another 5 minutes while stirring continuously till it thickens. Add butter, cheddar cheese, parmesan cheese and resume stirring till the cheese melts.

5. Add 1/4th of the grit mixture to the beaten egg and stir well. Then add this grit-egg mixture into the remaining grit mixture immediately until smooth.

6. Pour this mixture into the prepared baking dish. Bake for around 30 minutes or till it turns light brown on the top. Remove from the oven.

SERVING

7. In a serving bowl or plate, serve the grits immediately hot.
