Episode 134 - Hawaiian Fog Ice Cream

My friend Gwen over a Devour and Conquer suggested that my earl grey tea and coconut milk concoction should be called Hawaiian Fog since it was like a tropical version of a London Fog. I loved her suggestion and turned it into ice cream. I hope you do too!

Heavy cream 10 1/2 Ounce
Whole milk 10 1/2 Ounce
Coconut milk 10 1/2 Ounce
Granulated sugar 7 Ounce
Earl grey tea 1 1/4 Ounce (Loose Leaves)
Salt 1/4 Teaspoon

1. In a pot add heavy cream, whole milk, sugar and salt. Mix them well and bring to boil on medium heat. Turn off the heat.

2. Remove from the stove. Add the tea and allow to steep for 1 minutes. Steeping it too long will make it bitter.

3. Strain it into a bowl of coconut milk and whisk it well till it is incorporated. Put in the refrigerator and allow to cool completely around 30 minute.

4. In an ice cream maker, freeze the ice cream while following the product instructions. Transfer into a bowl or paper quart and cover with a parchment paper touching the ice cream to avoid ice crystals being formed. Freeze for at least 4 hours before serving.

5. In a serving bowl, serve the ice cream as it is or with ay dessert of choice.
