Crunchy Vanilla Pinwheels Glazed with Apple Jam

This is a crunchy sweet snack. It is like a combination of roll and cookie. The apple sauce gives it its typical flavor and cardamom and vanilla enhances the taste. Its texture is more like a soft biscuit. It is definitely a winner on the tea table.

Ingredients

For the dough
All purpose flour 2 Cup (32 tbs)
Eggs 1 Medium
Warm milk 1/2 Cup (8 tbs)
Sugar 1/4 Cup (4 tbs)
Melted butter 1/4 Cup (4 tbs)
Dry yeast 1 1/2 Teaspoon
Salt 1/2 Teaspoon
For the filling
Cardamom powder 1 Teaspoon
Vanilla extract 2 Teaspoon
Brown sugar 1/2 Cup (8 tbs)
Butter/Margarine 2 Tablespoon , softened
For the glazing
Apple sauce 2 Tablespoon
Water 1 Tablespoon

GETTING READY

For The Dough

1. In a bowl, mix all the ingredients one by one till combined with the flour being the last. Mix well into a dough.Cover it with a wrap and let it sit in a warm place for around 1 1/2 - 2 hours or till the dough doubles.

2. Press the dough with hands to remove the air. Set aside.

For The Filling

3. In another bowl, add the butter and beat till creamy. Put in the brown sugar, cardamom and vanilla. Mix well till combined.

For the Pinwheels

4. Roll the dough into a rectangular sheet about 1/2 inch thick. Spread the brown sugar filling evenly over the dough. Roll the dough carefully like a carpet into a log.

5. Using a sharp knife or wire, cut the log into slices.

6. Grease a baking sheet with cooking oil or non-stick spray. Place the pinwheels carefully on it. Cover with a towel and set aside for 1 hour to rise.

7. Preheat the oven to 190 degrees C.

MAKING

8. Place the baking sheet in the oven and bake for around 15 minutes. Change the setting into broil and cook for another 2 minutes or till the tops turn brown.

9. Remove from the oven and when hot, brush the apple jam mixture over the pinwheel. Let it cool completely before serving.

SERVING

10. In a serving plate, serve the pinwheels with warm milk or any refreshing beverage.

TIPS

Nuts and dried fruits can also be added to the filling to make it more rich.
