Betty's Incredible Cincinnati Chili--2, 3, 4, 5-Way

In this video, Betty demonstrate how to make Incredible Cincinnati Chili-2-Way, 3-Way, 4-Way, and 5-Way. This is not your "Texas-Style" chili, but rather a regional dish that is well-known and loved in Ohio, Indiana, and Kentucky, and the surrounding states. The recipe was originated by a Greek immigrant, Tom Kiradjieff in 1922. He called the dish "spaghetti chili," and added a Middle Eastern flavor to the dish. Since that time, the recipe has had many revisions and versions, This is the version that is popular in the area where I live. It sounds unusual--but most people love it!

Ingredients

For chili
Lean ground beef 2 Pound
Onion 2 , chopped (2 cups of chopped)
Garlic cloves 3 , mince
Tomato sauce 15 Ounce
Beef broth 1 Cup (16 tbs)
Chili powder 2 Tablespoon
Semisweet chocolate chips 2 Tablespoon
White vinegar 2 Tablespoon
Honey 2 Tablespoon
Pumpkin pie spice 1 Tablespoon
Salt 1 Teaspoon
Ground cumin 1 Teaspoon
Cardamom 1/2 Teaspoon
Ground clove 1/4 Teaspoon
Accompaniments
Fettuccine 6 Ounce , cook following direction
Canned kidney beans 30 Ounce , drained, washed, and heated
Shredded sharp cheddar cheese 4 Cup (64 tbs)
Onion 1 Medium , chopped finely

Directions

MAKING

1. In a Dutch oven, cook beef, stirring constantly until crumbled and beginning to brown.

2. Add onion, and garlic. Stir and cook until the meat is browned and vegetables are tender.

3. Stir in tomato sauce, beef broth, chili powder, semisweet chocolate chips, vinegar, honey, pumpkin pie spice, salt, ground cumin, cardamom, and ground cloves. Bring to a boil. Cover, and simmer over low heat for 1 hour.

FINALIZING

4. On a platter, lay fettuccine, and top it with chili followed by cheese, onion, and beans or serve in any style (given below) you want.

SERVING

5. Surround the platter with oyster cracker and serve immediately.

For the following combinations, it is crucial that you use the order given:

2-Way Chili: Chili served over fettuccine

3-Way Chili: Additionally topped with shredded Cheddar cheese

4-Way Chili: Additionally topped with chopped, fresh onions

5-Way Chili: Additionally topped with kidney beans
