Healthier Pineapple Coconut Cake

Hawaiian recipe specialities would prominently comprise of certain ingredients like pineapple, coconut and macademia nuts. A cake with these ingredients would be really lip-smacking and so I just gave it a try!


Unsalted butter 6 Tablespoon , melted
Brown sugar substitute 1/2 Cup (8 tbs)
Fresh pineapple 40 Ounce , chopped
Macadamia nut 1/4 Cup (4 tbs)
For batter:
Eggs 3 Large
Granulated sugar substitute 5 1/2 Cup (88 tbs)
Vanilla extract 1 Teaspoon
Low calorie coconut milk 3/4 Cup (12 tbs)
All purpose flour 2 Cup (32 tbs)
Salt 1 Pinch
Baking powder 2 Teaspoon



1. Cover baking pan with melted butter and sprinkle brown sugar on top.

2. Arrange the pineapple pieces on top the brown sugar in a nice pattern to cover the entire surface of the pan.

3. Sprinkle the macadamia nuts on top of the pineapple pieces. Set aside.

4. Preheat oven to 350 degree F or 180 degree C.


5. In a large bowl, beat eggs with sugar until you get a fluffy whitish mixture.

6. Add vanilla extract and salt. Gently mix to combine.

7. Pour the coconut milk and gently mix it with the rest of the ingredients.

8. Sift and add flour and baking powder to the batter. Gently mix well.

9. Using a ladle, spread the batter over the pineapples pieces in the baking pan. Do it gently so that the pineapple pieces don’t move around.

10. Using a spatula smooth out the surface.

11. Pop in oven and bake for 55-60 minutes or until the top is firm when gently touched.

12. Remove from oven and let it rest for 10 minutes before flipping.

13. Run a sharp knife around the edges of the cake to make sure that they are not stuck to the mold. Place a plate on top, and quickly flip. Give it a nice shake. Gently remove the baking pan.

14. Let the cake cool down to room temperature.


15. Top with icing sugar/cream, if required and serve warm/cold as a dessert.
