In this video, Betty makes Mudhen Bar Cookies. This is a traditional Southern treat.
Butter | 1/2 Cup (8 tbs) | |
Sugar | 1 Cup (16 tbs) | |
Eggs | 2 , divided | |
All purpose flour | 1 1/2 Cup (24 tbs) | |
Baking powder | 1 Teaspoon | |
Salt | 1/2 Teaspoon | |
Vanilla extract | 1/2 Teaspoon | |
Chopped pecans | 1 Cup (16 tbs) (or nuts of your choice) | |
Brown sugar | 1 Cup (16 tbs) | |
Cooking oil spray | 1 |
GETTING READY
1. Spray and grease a 13-inch x 9-inch x 2-inch baking pan with cooking oil spray.
2. Preheat oven to 350 degree F.
MAKING
3. In a large bowl, cream together butter and sugar.
4. Whisk in 1 egg and 1 egg yolk. Set aside.
5. In a separate bowl, combine all-purpose flour, baking powder, and salt. Mix well.
6. Beat dry ingredients into creamed butter egg mixture.
7. Pour vanilla, mix well and then spread the batter evenly in the greased baking pan.
8. Sprinkle pecans on top and set aside.
9. In a medium bowl, beat remaining egg white until frothy.
10. Gradually, add brown sugar and beat until stiff peaks form. Spread mixture over nuts.
11. Pop the baking pan in oven and bake for 20-30 minutes or until toothpick when inserted in the deepest part comes out clean and the top just starts browning.
12. Remove from oven, let cool completely, and then cut into bars.
