Tasty Tangy Creole Franks

This authentic creole preparation is flavor explosive. True to its origin and reflects French, Spanish, Portuguese,Italian, Native American and African influences.

Ingredients

Olive oil 1 Tablespoon
Extra lean beef frankfurters 1 Pound , cut into 1/2 inch pieces
Low sodium tomato sauce 1 Can (10 oz)
Fresh corn kernels 7 Ounce
Instant minced onions 1 Tablespoon
Minced garlic cloves 1 Tablespoon
Sweet bell peppers 3 Ounce (Red and green coloured)
Worcestershire sauce 2 Teaspoon
Mixed herbs 1 Teaspoon
Salt & pepper 1/4 Teaspoon
Elbow macaroni 1 Cup (16 tbs)
Low fat shredded cheddar cheese 1 Cup (16 tbs)
Fresh lemon juice 1 Teaspoon

Directions

GETTING READY

1. Cut the low sodium, extra lean beef frankfurters into bite sized pieces.

2. Cook macaroni; drain and set aside.

PREPARATION

3. Heat the olive oil in a large skillet.

4. Stir fry the minced garlic and onion till raw taste disappears.

5. Add the cubed sausages; cook, stirring frequently, until brown, in about 5 minutes.

6. Next add tomato sauce, Worcestershire sauce, corn, mixed herbs and salt; bring to a boil.

7. Reduce heat and simmer, uncovered, for 10 minutes, stirring occasionally.

8. Turn off flame and add the freshly squeezed lemon juice.

SERVING

9. Pour the sauce over the cooked macaroni; sprinkle grated cheese on top and serve hot.
