Tangy cranberries and sweet peaches make a perfect pair in this easy-to-make cobbler!
Butter | 2/3 Cup (10.67 tbs) , melted | |
Cranberry quick bread & muffin mix | 15 3/5 Ounce | |
Canned sliced peaches | 58 Ounce | |
Egg | 1 , beaten | |
Orange zest | 2 Tablespoon , divided | |
Sweetened dried cranberries | 2/3 Cup (10.67 tbs) | |
Cinnamon | 1 Tablespoon | |
Sugar | 1/3 Cup (5.33 tbs) | |
For serving | ||
Ice cream/Whipped cream | 12 Tablespoon (one scoop per serving) |
GETTING READY
1. Preheat the oven to 375F.
2. Drain the peaches reserving 1 cup of syrup.
MAKING
3. In a 13 X 9 inch baking pan, pour butter and set aside.
4. In a large bowl, combine dry bread mix, reserved peach syrup, egg and orange zest(1 tablespoon), stir until well incorporated.
5. Drop batter by spoonfuls onto the tray with butter, spread slightly without stirring.
6. Arrange the peach slices and sprinkle cranberries.
7. In a small bowl, combine sugar, orange zest(1 tablespoon) and cinnamon, mix and sprinkle over the peach slices and cranberries.
8. Bake at 375F for 50 to 60 minutes, until edges are deeply golden . Allow to cool slightly.
SERVING
9. Serve with whipped cream or ice cream.
