This light and fluffy butter tastes delicious on waffles, scones, muffins, pancakes and toast! Fill a little Mason jar with this yummy butter, add a festive spreader and it makes a sweet gift-from-the-kitchen, too!
|Butter||3/4 Cup (12 tbs) , softened|
|Brown sugar||2 Tablespoon|
|Light corn syrup||2 Tablespoon|
|Fresh cranberry/Dried cranberries||1 Cup (16 tbs) , chopped|
|Toasted pecans||2 Tablespoon , chopped|
1. In a bowl, combine butter, brown sugar and light corn syrup. Using an electric mixer, whisk on low speed for about 5 minutes or until the mixture turns fluffy.
2. Add cranberries and pecans, beat for another 5 minutes, until the butter turns pink.
3. Transfer the mixture to a sheet of plastic wrap. Shape into a log, wrap and chill.
4. Serve this butter with waffles, muffins or pancakes.
