Healthy Chicken Fajita Recipe

Hey, I'm back in the kitchen today to give you one more idea for a healthy meal using real food. We are going to eat some easy to make Lettuce Wrapped Chicken Fajitas, which are a regular menu item in my house. I think it is a good idea to stay away from flour tortillas whenever possible. Aside from the gluten in them which can be an inflammatory food for a lot of people, the tortillas are high in carbohydrate and are just empty calories that can be avoided without much pain.


Chicken breast 10 Ounce
Mandarin oranges 2 Small , juiced (Or 1 big orange)
Lime 1 , juiced
Sea salt 1 Teaspoon
Black pepper 1 Teaspoon
Paprika 1/2 Teaspoon
Garlic cloves 2 , mince
Lettuce leaves 4 Large
Coconut oil 1/4 Tablespoon
Red bell pepper 1/2 , julienned
Yellow bell pepper 1/2 , julienned
Green bell pepper 1/2 , julienned
White onion 1/2 Small , slice
Avocado 1/2 , dice
Salsa 2 Tablespoon



1. In a bowl, add the chicken along with the juice of 2 mandarin oranges, lime juice, sea salt, black pepper, paprika and garlic cloves. Let this sit for 20 minutes to an hour.


2. Fire up the grill and grill the chicken until cooked well. Once cooked, shred the chicken into bits.

3. In a pan, add coconut oil and the julienned peppers along with a touch of sea salt and pepper and cook until soft.

4. Once done, squeeze the juice of half a lime into the pan.

5. Lay out the lettuce on a plate and add in the chicken.

6. Next, add some of the sauteed peppers and onions, avocado and salsa.

7. Roll up the lettuce leaf so that all the stuffing are intact.


8. Plate and serve.
