Stuffed Peppers

Ingredients

Bell peppers 3 Large , halfed and de
Potatoes 2 Medium , boiled and mashed
Zucchini 2 Tablespoon , finely chopped
Coriander 1 Tablespoon
Sweet corn 1 Tablespoon
Peas 1 Tablespoon
Button mushrooms 3 Tablespoon
Garlic 2 Teaspoon
Ginger 1 Tablespoon
Chili flakes 2 Teaspoon
Onion 1 Medium , chop
Cherry tomatoes 6 Small , halved
Mozzarella cheese 1/2 Cup (8 tbs)
Pepper 1 Teaspoon
Salt To Taste

Directions

MAKING

1. In a wok, heat the oil and add onions, ginger and garlic and saute for a while.

2. Add the zucchini and mushroom and cook for 4 minutes.

3. Add the sweet corn, peas, mashed potatoes, chili flakes, pepper, coriander leaves and salt and mix well. Saute until the potato browns.

4. Grease the bell peppers and stuff with the vegetable mix.

5. Top with halved cherry tomatoes and mozzarella cheese.

6. Microwave the pepper for 20 minutes.

SERVING

7. Plate and serve as a side dish.
