Veggie Nuggets

Do you like saving money? With these Homemade Veggie Nuggets not only will you save money but, your kids will gobble them up! Veggie Nuggets are delicious and nutritious, plus your kids will have no idea how good they are for them. And who doesn't love saving money and having their kids eat healthy?


Russet potatoes 2 Large , boiled, diced
Carrot 2 Medium , cut into 1
Broccoli florets 1 Cup (16 tbs)
Frozen corn kernels 1/2 Cup (8 tbs) , Defrosted
Kosher salt 1/2 Teaspoon
Garlic powder 1/2 Teaspoon
Onion powder 1/2 Teaspoon
Flour 1/4 Cup (4 tbs)
Eggs 2 Large , whisked
Breadcrumbs 1 Cup (16 tbs)



1. Chop carrots, broccoli and corn into tiny pieces in a food processor.

2. Mash potatoes in a mixing bowl and add chopped vegetables into it.

3. Season with kosher salt, garlic powder and onion powder and mix gently.

4. Spread this potato mixture evenly to a 1/2 inch thick on a sheet tray.

5. Put it in freezer for 30 minutes.

6. Cut it in different shapes using cookie cutters.

7. Coat these nuggets with flour, dip it in eggwash and coat a layer of breadcrumbs.

8. Put these nuggets on a sheet tray and put it in fridge for 30 more minutes.

9. Grill each side of the nuggets for 2 minutes. You could keep the nuggets into the fridge and use it when needed.


10. Serve it with some organic ketchup.
