Part 2 - Fried Chicken Wings with Sauteed Greens

For the saut ed turnip
Pancetta 4 Ounce , dice
Olive oil 1 Tablespoon
Turnip greens 6 Cup (96 tbs) , chop
Onion 1 Medium , chop
Garlic 3 Clove (15 gm) , chopped finely
Seasoning mix 1 Teaspoon (Grand diamond sesoning)
Chicken broth 1 Cup (16 tbs) (Low sodium)
Honey 1 Teaspoon
For the chicken wings
Chichen wings 500 Gram
Buttermilk 1 Cup (16 tbs)
Hot sauce 1 Tablespoon (optional)
Flour 1 Cup (16 tbs)
Seasoning mix 2 Tablespoon (Grand diamond sesoning)
Peanut oil 500 Milliliter



1. In a skillet render the Pancetta on medium low heat, until brown. Remove the pancetta onto paper towels to drain. Retain the fat.

2. In a bowl soak chicken wings in buttermilk and hot sauce for 15 minutes, then drain and season chicken wings with grand diamond seasonings.

3. Coat the chicken wings with flour and seasoning. Leave aside for few minutes.

4. Heat peanut oil in a large frying pan to 350 degree F, This oil needs to be hot before you add the chicken wings.


5. To make the sauteed greens, in a skillet add olive oil with the pancetta fat, and saute the onions until they are soft. Then add the garlic, turnip greens, grand diamond seasoning, chicken broth, honey and finally pancetta bits. Continue to sauté all the ingredients.

6. Cook the greens for 15-20 minutes covered and on low flame. Once done keep warm until ready to serve.

7. To fry the chicken wings, check temperature of oil. Then drop the coated chicken wings (in batches, do not overcrowd the pan) into the oil and fry them for 8-10 minutes or until golden brown in color. Use a slotted spoon to turn the wings over and move them around so that they fry evenly.

8. Remove and drain on paper towels. Fry the next batch.


9. Serve the Crispy and spicy chicken wings with the sauteed turnips greens.


Peanut oil does not have Trans- fat hence you can re use the oil by properly straining it.
