Cajun Kielbasa Couscous - We Killed this for lunch

Quick, easy, flavorful and the whole family enjoyed it! Don't you just love dishes like that? I do and this cajun kielbasa couscous fit the bill!

It's hearty and very filling! Next time I think I will go all out and throw in a ton of different meats and veggies.

Ingredients

Green bell pepper 1/2 Cup (8 tbs) , seeded, diced
Turkey kielbasa sausage 14 Ounce , sliced
White onion 1/2 Cup (8 tbs) , diced
Celery 1/2 Cup (8 tbs) , minced
Garlic 2 Clove (10 gm) , minced
Chicken broth 2 Cup (32 tbs) (can use low sodium broth)
Water 1/2 Cup (8 tbs)
Butter 3 Tablespoon , softened
Parsley 1 Tablespoon , dry (dried is preferred as a garnish too)
Couscous 2 Cup (32 tbs)
Cajun seasoning To Taste
Vegetable oil 1 Tablespoon

Directions

MAKING

1. In a large skillet over medium heat, heat 1 tablespoon of vegetable oil.

2. Add sausage and cook until slightly browned.

3. Put green bell peppers, onions, and celery. Sauté on low until veggies are slightly tender.

4. Stir in minced garlic. Cook garlic if desired.

5. Remove from heat and set aside.

6. In a pot, add chicken broth, water, and butter.

7. Bring to a boil. Add the couscous and bring to a boil.

8. Once boiling, remove from heat, cover and let it rest for 5-7 minutes.

9. When done, fluff with a fork. Add Cajun seasoning if desired.

SERVING

10. In a serving plate, put the couscous and spread the sausage and veggies mixture on top. Garnish with parsley. Serve hot.
