Green Noodle Pudding

Ingredients

Egg yolks 4
Chopped scallions 4 Tablespoon
Chopped cooked spinach 1 1/2 Cup (24 tbs)
Fine noodles 1/2 Pound , cooked, drained
Kosher salt 1 Teaspoon
Egg whites 4 , stiffly beaten

Directions

GETTING READY

1) Preheat oven to 350° F.

MAKING

2) Take a mixing bowl and beat egg yolks in it.

3) Add scallions, noodles, salt and spinach. Mix nicely.

4) Fold in egg whites.

5) Take a 1 1/2-quart greased baking dish and pour mixture in it.

6) Bake in the oven for about 30 minutes.

SERVING

7) Serve hot with dairy dishes or meat.
