Ingredients

Fresh corn ears 18 Ounce
Water 7 Quart
Cabbage head 1 Small
Chopped onion 1 Cup (16 tbs)
Chopped green pepper 1 Cup (16 tbs)
Chopped sweet red pepper 1 Cup (16 tbs)
Sugar 2 Cup (32 tbs)
Dry mustard 2 Tablespoon
Celery seeds 1 Tablespoon
Mustard seeds 1 Tablespoon
Salt 1 Tablespoon
Ground turmeric 1 Tablespoon
Vinegar 1 Quart (5% Acidity)
Water 1 Cup (16 tbs)

Directions

GETTING READY

1 Remove the husks and silks from the corn.

MAKING

2 In a pan, bring 7 quarts water to a boil.

3 Add in the corn.

4 Bring water to a second boil.

5 Cook for 5 minutes.

6 Allow to cool.

7 Cut the corn from the cob.

8 It should measure about 2 quarts of kernels.

9 In a lare saucepan, mix corn kernels and the remaining ingredients.

10 Simmer over low heat for 20 minutes.

11 Bring the mixture to a boil.

12 Transfer into hot sterilized jars, allowing about 1/4-inch of headspace.

13 Cover immediately with metal lids.

14 Secure tightly.

15 Process in boiling-water for 15 minutes.

SERVING

16 Serve as desired.
