Hawaiian Papaya Ribs

Lean spareribs 5 Pound , cut in serving size pieces
Salt To Taste
For papaya seed marinade
Papayas 2 , peeled and quartered
White wine/Tarragon vinegar 1 Cup (16 tbs)
Sugar 1/2 Cup (8 tbs)
Seasoned salt 1 Teaspoon
Dry mustard 1 Teaspoon
Onion/1 teaspoon instant minced onion 1 Small , minced
Salad oil 2 Cup (32 tbs)
Papaya seeds 2 Tablespoon (fresh)



1. On a rack in a shallow roasting pan arrange spareribs, salt lightly and roast at 350°F 30 minutes.

2. Remove and pour thick marinade over ribs until lightly covered.

3. Roast placing back in the oven for about 1 1/2 to 2 hours or until golden brown, brushing once or twice with the marinade during roasting.

4. Brush papaya with marinade and place on rack with spareribs during last 30 minutes of roasting.

For the papaya seed marinade :

5. In an electric blender container place vinegar, sugar, seasoned salt, and dry mustard, turn on motor and gradually add oil and onion.

6. Add papaya seeds and blend only until they are the size of coarsely ground pepper.


8. Serve hot with garnish as desired.
