This DELICIOUS mango cobbler is the perfect way to use up all of those late-season mangos! It's so easy to make and it will definitely be a Summer favorite.

Chopped mango | 3 Cup (48 tbs) | |
Sugar | 1/4 Cup (4 tbs) | |
All purpose flour | 1/4 Cup (4 tbs) | |
Salt | 1/4 Teaspoon | |
Fresh squeezed lemon juice | 2 Tablespoon | |
For cobbler: | ||
Flour | 1 Cup (16 tbs) | |
Sugar | 2 Tablespoon | |
Salt | 1/4 Teaspoon | |
Cold butter | 4 Tablespoon , cut into pieces | |
Shredded coconut | 1/4 Cup (4 tbs) | |
Egg | 1 | |
Milk | 1/3 Cup (5.33 tbs) | |
Vanilla ice cream | 1 Cup (16 tbs) (optional) |
GETTING READY:
Preheat oven at 400°F.
MAKING:
In a large bowl, combine mango, sugar, flour, salt and lemon juice.
Mix well and add to pie dish.
In another bowl, combine cobbler ingredients-flour, sugar, salt, cold butter and mix well.
Add coconut, egg, milk and stir well.
Top over pie dish and pop into oven.
Bake for 25-30 minutes or until golden brown.
SERVING:
Serve with ice cream and enjoy!
