Betty's Southern Potato Biscuits

Betty demonstrates how to make Southern Potato Biscuits. These are great for breakfast, brunch, lunch, and dinneror a mid-morning or mid-afternoon snack!


All purpose flour
Baking powder 4 Teaspoon
Salt 1/2 Teaspoon
Butter 3 Tablespoon
Mashed potatoes 1 Cup (16 tbs)
Milk 1/2 Cup (8 tbs)



Stir together flour, baking powder, and salt. 

Cut in butter until mixture resembles coarse cornmeal. 

Add potatoes and milk, and stir until a soft dough is formed. 

Turn dough out on floured surface and knead lightly 10 to 12 times. 

Roll dough to ½-inch thickness. Cut with a 2 ½-inch biscuit cutter. 

Place biscuits on a lightly greased baking pan and bake at 400 degrees (F) for 15 minutes, or until lightly browned.
