On nights when I'm stumped as to what to make for dinner, I make these Tex-Mex Rice Cakes. Since I always have the rest of the ingredients on hand, it only takes me minutes to prepare. The best part is that I can make a few extra for Kenya's school lunch the next day.
Cooked brown rice | 1 Cup (16 tbs) | |
Whole wheat bread crumbs | 1/2 Cup (8 tbs) | |
Grated cheddar cheese | 1/2 Cup (8 tbs) | |
Frozen corn | 3/4 Cup (12 tbs) , Defrosted | |
Chopped cilantro | 2 Tablespoon | |
Salt | 1/2 Teaspoon | |
Eggs | 2 , whisked | |
Oil | 2 Tablespoon (vegetable or canola oil for cooking) |
MAKING:
In a bowl, combine cooked rice, bread crumbs, cheddar cheese, corn, cilantro, salt and mix well.
Add whisked eggs and mix well.
Shape mixture into patties as shown in the video.
Heat oil in a skillet and fry patties for 2 minutes per side.
SERVING:
Serve with salsa and enjoy!
