Betty demonstrates how to make Fried Country Ham Steaks with Redeye Gravy for Derby Day (May 7, 2016). This is the beginning of a wonderful Kentucky Derby breakfast (or dinner)!


Olive oil 1 Tablespoon
Butter 1 Tablespoon
Ham steak 24 Ounce (three 8
Strong brewed coffee 1 1/2 Cup (24 tbs) (hot)
Firmly packed light brown sugar 1/4 Cup (4 tbs)



Melt butter with olive oil in a large, heavy skillet over medium heat. 

Add ham steaks in a single layer. Cook 5 minutes on each side, or until browned. 

Transfer cooked ham from skillet to a large serving platter. 

Leave drippings in skillet. 

To make Redeye Gravy, add coffee and brown sugar to drippings in skillet. 

Stir to loosen ham particles from bottom and sides of skillet. 

Bring mixture to a boil. Boil, stirring occasionally, until reduced by half, about 15 minutes. 


Pour Redeye Gravy into serving bowl and serve with Fried Country Ham Steak.
