Betty demonstrates how to make Spiced Applesauce Muffins for Easter. These muffins can be used as a sweet bread or a light dessert.
|Vegetable oil||1 Cup (16 tbs)|
|Sugar||2 Cup (32 tbs)|
|Unsweetened applesauce||1 Cup (16 tbs)|
|Salt||1 1/2 Teaspoon|
|Baking soda||1 Teaspoon|
|Baking powder||1 Teaspoon|
|Ground nutmeg||1 Teaspoon|
|Ground cinnamon||1 Teaspoon|
|Ground allspice||2 Teaspoon|
|Cooking oil spray||2 Dash|
In a large mixing bowl, use an electric mixer on medium speed to blend vegetable oil, sugar, applesauce, and eggs until smooth. Set aside.
In a medium-sized bowl, stir together flour, salt, baking soda, baking powder, nutmeg, cinnamon, and allspice.
Stir the flour mixture into the applesauce mixture, until just combined.
Spoon batter into muffin tins that have been sprayed with cooking oil spray. This batter should make 20 to 24 muffins. Bake at 350 degrees (F) for about 15 minutes, or until a toothpick inserted into a muffin comes out clean.
Let cool for 10 minutes in muffin pans on cooling rack.
Remove from muffin pans and serve warm or cool completely on cooling rack and transfer to a nice serving plate
