Little Debbie-Inspired Oatmeal Cream Pies

These homemade oatmeal cream pies are a little piece of nostalgic heaven! I'll take these babies over the store-bought kind any day!!

I had so much fun whipping up these cute little pies! They are great for lunches and bake sales. The oatmeal cookie is soft and chewy and the marshmallow cream filling is perfectly fluffy and sweet.


Baking powder 1 Teaspoon
All purpose flour
Baking soda 1 Teaspoon
Salt 1/2 Teaspoon
Cinnamon 1 Teaspoon
Butter 1/2 Cup (8 tbs) , softened ((do not melt))
Shortening 1/2 Cup (8 tbs) (I use butter flavored)
Brown sugar (packed) 1 1/2 Cup (24 tbs)
Eggs 2
Molasses 1 Tablespoon
Vanilla extract 1 Teaspoon
Raisin 1 Cup (16 tbs) (pureed with ½ cup water)
Unsweetened coconut flakes 1/4 Cup (4 tbs) , finely shredded
Instant oats 2 Cup (32 tbs) (processed in a food processor to make oats smaller)
For frosting
Shortening 1/2 Cup (8 tbs) (do not used butter
Heavy cream 1 Tablespoon
Vanilla extract 1 Teaspoon
Powdered sugar 1 Cup (16 tbs)
Marshmallow creme 7 Ounce (JetPuff)
