One - Pot Tex - Mex Pasta

This delicious one-pot pasta recipe has black beans, tomatoes, spinach and cheese.


Butter 2 Tablespoon
Onion/Large shallot 1 Small , minced
Garlic 2 Clove (10 gm) , minced
Salt 1/4 Teaspoon
Pepper 1/4 Teaspoon
Dried oregano 1/2 Teaspoon
Vegetable broth 2 1/4 Cup (36 tbs)
Pasta 8 Ounce (small shape)
Chopped greens 3 Cup (48 tbs) (3 ounces)
Cherry tomatoes 1 Cup (16 tbs) , halved
Canned black beans 1 1/2 Cup (24 tbs) , drained (1 can, 15 ounce each)
Crumbled cotija cheese 2 Ounce (1/4 cup)
Toasted pepita 1/4 Cup (4 tbs) (optional)



1.Heat the butter in a large skillet over medium-high. Add onion, garlic. Cook, stirring often, until the onions are soft and browned and the liquid has cooked off.

2.Add the seasonings, broth and pasta. Cover. Increase heat to high. Bring to boil, then reduce heat and simmer covered 7-8 minutes until the pasta is tender and most of the liquid is absorbed. A glass lid is helpful.

3.Stir in greens, beans, and tomatoes and cook until greens wilt.

4.Top with cheese and pepitas before serving


5.Serve and enjoy.
