Betty's Version of Michelle's Mother's Coleslaw

Betty demonstrates how to make her version of Michelle's Mother's Coleslaw. This recipe was sent in by Michelle Ramsey of South Carolina. The recipe was created by her mother, Anna Lemmon, a beautiful Southern woman and great cook. Thanks, Michelle and Anna.

Ingredients

Cabbage head 1 Small
Tomatoes 1 1/2 Large , dice (or 3 medium tomatoes)
Chopped pimiento stuffed green olives 1/2 Cup (8 tbs) (You may increase this up to ¾ cup.)
Mayonnaise 3/4 Cup (12 tbs)
Olive juice 3 Tablespoon (from the jar)
Salt and pepper To Taste

Directions

Making

Shred cabbage in a food processor and place in a large bowl. Add tomatoes and olives. 

In a small dish, mix mayonnaise, olive juice, salt, and pepper. 

Pour over vegetables and mix thoroughly. 

Cover with plastic wrap and chill until ready to serve.
