My creamy potato soup recipe is perfect for cold days. Only 5 ingredients and 30 minutes to make.
Diced onions | 1/4 Cup (4 tbs) | |
Diced celery | 1/4 Cup (4 tbs) (optional) | |
Butter/Bacon fat | 2 Tablespoon | |
Water | 3 Cup (48 tbs) | |
Salt | 1 Teaspoon | |
Diced potatoes | 2 Cup (32 tbs) (peeled or not) | |
Canned evaporated milk | 15 Ounce (1 can) | |
For garnish: | ||
Chopped parsely | 1 Tablespoon | |
Chopped dill | 1 Tablespoon | |
Chopped celery leaves | 1 Tablespoon | |
Chopped paprika | 1 Teaspoon |
MAKING:
1.Heat your fat of choice over medium heat in a saucepan.
2.Saute onion and celery about 5 minutes or until translucent.
3.Add water, salt, and potatoes.
4.Bring to boil then simmer uncovered until tender, and the water has reduced so that it just barely covers the potatoes, about 20 minutes total.
5.Add milk and reheat.
SERVING:
6.Serve with garnish of choice.
