Diced red bell pepper | 1 Cup (16 tbs) ((about half a large pepper)) | |
Zucchini | 1 Small , shredded | |
Green onions | 8 , roast ((sliced into 1/4 inch pieces)) | |
For optional ingredients for salad: | ||
Canned chickpeas | 10 Ounce ((1 can)) | |
Chopped spinach/Chopped arugula | 1 Cup (16 tbs) | |
Grated parmesan | 1/2 Cup (8 tbs) | |
Artichoke hearts | 1 | |
Olives | 4 | |
For dressing: | ||
Red wine vinegar | 1 Ounce | |
Olive oil | 2 Ounce ((or whatever you have)) | |
Dijon mustard | 2 Teaspoon | |
Salt | 1/2 Teaspoon | |
Pepper | 1/2 Teaspoon | |
Dried basil | 1/2 Teaspoon | |
Dried oregano | 1/4 Teaspoon | |
Crushed red pepper | 1/4 Teaspoon |
MAKING:
1.Put dressing ingredients in a jar and shake well.
2.Set aside while you prepare the other ingredients.
3.Combine the salad with the dressing and mix gently. Refrigerate for 1-2 hours for best taste.
