How to make tabouli (tabouleh). Tabouli is a classic middle eastern salad of herbs, bulgur wheat, tomatoes and cucumber, great for light summer meals.
Bulghur | 1 Cup (16 tbs) (medium | |
Boiling water | 1 Cup (16 tbs) | |
Diced tomato | 1 Cup (16 tbs) | |
Diced cucumber | 1 Cup (16 tbs) (seeded, peel if you like) | |
Diced onion/Green onions | 1/2 Cup (8 tbs) (soak in ice water to crisp it and mellow it) | |
Minced parsley | 1 Cup (16 tbs) | |
Chopped mint/Cilantro /dill | 1/4 Cup (4 tbs) | |
Pepper | 1 Teaspoon | |
For the dressing: | ||
Fresh lemon juice | 1/4 Cup (4 tbs) | |
Extra virgin olive oil | 1/3 Cup (5.33 tbs) (it really does make a difference in this case) | |
Garlic | 1 Clove (5 gm) , minced | |
Salt | 1 Teaspoon |
MAKING:
1.In a bowl, combine bulghur and water. Cover and let it sit for 15 minutes.
2.In a bowl, combine lemon juice, olive oil, garlic, salt, pepper and mix well.
3.Add vegetables and herbs to bulghur and mix well.
4.Pour dressing and mix again.
5.Let it sit for 1 hour before serving. Chill if desired.
