Betty demonstrates how to make Frozen Cranberry Salad. This is a delightful mixture of bananas, pineapples, whole cranberry sauce, marshmallows, pecans, and sweetened whipped cream. It is served frozen.
Whipping cream | 1 Cup (16 tbs) | |
Vanilla extract | 1/2 Teaspoon | |
Confectioner’s sugar | 1/4 Cup (4 tbs) | |
Ripe bananas | 3 (peeled and mashed) | |
Crushed pineapple can | 8 Ounce , drained | |
Miniature marshmallows | 1 Cup (16 tbs) | |
Whole cranberry sauce | 1 Cup (16 tbs) | |
Chopped pecans | 1 Cup (16 tbs) |
Making
In a large bowl, whip cream using medium speed of an electric mixer, until soft peaks form.
Add vanilla and confectioner’s sugar. Continue beating until stiff peaks form.
Add bananas, pineapple, marshmallows, and whole cranberry sauce. Mix well using an electric mixer.
Fold in pecans.
Pour mixture into a freezer safe dish. Freeze overnight or longer.
Serving
Serve frozen, but let sit at room temperature for 1 hour before serving.
