Cabbage | 1 Pound , thinly shredded | |
Salt | 1/2 Teaspoon | |
Celery stalk | 2 , sliced diagonally | |
Diced onion | 1/2 Cup (8 tbs) | |
Cilantro leaves | 1/4 Cup (4 tbs) | |
Roasted almonds/Peanuts | 1/2 Cup (8 tbs) | |
Minced chipotle in adobo | 1 Teaspoon | |
Lime juice | 2 Tablespoon | |
Red wine vinegar | 1 Tablespoon | |
Olive oil | 1 Teaspoon | |
Honey | 1 Teaspoon | |
Salt | To Taste | |
Black pepper | To Taste |
MAKING:
1.In a large bowl, combine cabbage, salt and toss well. Set aside for 10-30 minutes.
2.In a jar, combine chipotle, lime juice, red wine vinegar, olive oil, honey, salt, pepper and mix well.
3.Toss cabbage with celery, onion, cilantro, dressing and mix well.
4.Chill for 1 hour.
5.Garnish with nuts.
