Vinaigrette Coleslaw

Ingredients

Cabbage 1 Pound , thinly shredded
Salt 1/2 Teaspoon
Celery stalk 2 , sliced diagonally
Diced onion 1/2 Cup (8 tbs)
Cilantro leaves 1/4 Cup (4 tbs)
Roasted almonds/Peanuts 1/2 Cup (8 tbs)
Minced chipotle in adobo 1 Teaspoon
Lime juice 2 Tablespoon
Red wine vinegar 1 Tablespoon
Olive oil 1 Teaspoon
Honey 1 Teaspoon
Salt To Taste
Black pepper To Taste

Directions

MAKING:

1.In a large bowl, combine cabbage, salt and toss well. Set aside for 10-30 minutes.

2.In a jar, combine chipotle, lime juice, red wine vinegar, olive oil, honey, salt, pepper and mix well.

3.Toss cabbage with celery, onion, cilantro, dressing and mix well.

4.Chill for 1 hour.

5.Garnish with nuts.

SERVING:

6.Serve and enjoy!
