Peach and raspberry cobbler is not only super easy but also incredibly tasty. This naughty treat is a perfect taste of summer. Delish!

Plain flour | 200 Gram | |
Semolina | 35 Gram | |
Baking powder | 1 1/2 Teaspoon | |
Bicarbonate of soda | 1/2 Teaspoon | |
Chilled butter | 75 Gram , diced | |
Caster sugar | 2 Tablespoon | |
Buttermilk | 180 Milliliter | |
Demerara sugar | 1 Tablespoon | |
Cinnamon | 1/2 Teaspoon | |
Double cream | 2 Tablespoon , whipped |
GETTING READY
1. Preheat the oven to 180 C.
MAKING
2. Put the peaches in a baking tray.
3. Top with raspberries. Sprinkle light brown sugar, cinnamon and nutmeg over the fruits.
4. Drizzle lime juice on top.
5. Add lemon zest and mix.
6. Bake in the oven for about 15 minutes.
7. Meanwhile, mix flour, semolina, white sugar and baking powder in a bowl.
8. Add butter to flour and crumble it up.
9. Pour buttermilk and bring the dough together with hands.
10. Divide the dough into six parts. Roll them in balls, flatten it up and place over the baked fruits.
11. Sprinkle demerara sugar on top.
12. Bake for about 20 minutes.
SERVING
13. Scoop and serve with whipped cream.
