Betty's Cooling Cucumber-Mint Lemonade

Betty demonstrates how to make refreshing Cucumber-Mint Lemonade. This is a great drink for a lazy summer day. It has a wonderful combination of flavorscucumber, mint, and lemon, sweetened with honey.

Ingredients

Cucumber 1 Medium , peeled (seeded and coarsely chopped)
Freshly chopped mint leaves 3 Tablespoon
Lemon juice 1 Cup (16 tbs) , chilled
Honey 1/2 Cup (8 tbs)
Salt 1 Pinch
Cold water 1/2 Gallon

Directions

Making

Place cucumber and mint in blender and pulse until finely chopped. 

Add lemon juice, honey, and a pinch of salt and blend until smooth, leaving some flecks of green. 

Pour mixture through a sieve into a bowl or large measuring cup. 

Use a spoon to press as much liquid as possible through the sieve. 

Discard the cucumber/mint pulp. 

Add enough water to the strained liquid to equal a total of 8 cups (1/2 gallon). 

Pour into two large pitchers for serving. 

Serving

Place ice cubes in a tall glass. Pour Cucumber-Mint Lemonade over ice cubes. 

Garnish the top of the glass with one slice of cucumber and a spring of mint.
