Betty's Delightful Coconut Scotties


Butter stick 1
Light brown sugar 3/8 Cup (6 tbs) (firmly packed)
White granulated sugar 3/8 Cup (6 tbs)
Egg 1
Baking powder 1/2 Teaspoon
Vanilla extract 1/2 Teaspoon
Butterscotch chips 6 Ounce
Sweetened flaked coconut 5 Ounce
All purpose flour 1 Cup (16 tbs)



In a large bowl, cream together all ingredients, except the chips, coconut, and flour. Use an electric mixer. 

By hand, stir in chips and coconut and mix well. 

Mix in flour. Dough will be stiff. 

Drop by teaspoonfuls onto an ungreased baking pan. 

Bake at 350 degrees (F) for 8 to 10 minutes. Allow cookies to cool in pan on cooling rack for 2 minutes. 

Remove cookies from pan and place on cooling rack and cool completely.


Serve with lemon tea.
