Kentucky Roast Beef Sandwich (Pit Barrel Cooker)

Sirloin tip roast cooked on the Pit Barrel Cooker! This was inspired by "Kentucky Roast Beef" restaurants from the 1970's.


Sirloin tip roast 8 1/2 Pound
Salt and pepper To Taste
For bbq sauce
Ketchup 1 Cup (16 tbs)
Jack daniels 1 1/2 Cup (24 tbs)
Honey 1/4 Cup (4 tbs)
Brown sugar 1/4 Cup (4 tbs)
Apple cider vinegar 1/4 Cup (4 tbs)
Ground mustard 1 Teaspoon
Ground coriander seed 1 Teaspoon
Celery seed 1 Teaspoon
Ground allspice 1 Teaspoon
Ground red pepper 1 Teaspoon
Salt To Taste
Worcestershire sauce 2 Dash
For serving
Buns 18 , toasted (as needed)



1. Preheat Pit Barrel Cooker.



2. Season the meat with salt and pepper and hang it into the cooker as shown in the video. Cover and cook until the internal temperature reaches 120 degree.

3. Remove from cooker, wrap with foil and set aside until the internal temperature reaches 130 degree.

For BBQ Sauce:

4.Place a saucepan on flame, add ketchup, Jack Daniels, honey, brown sugar, apple cider vinegar, ground mustard, coriander, celery seed, allspice, ground pepper, salt, and Worcestershire sauce. Mix, bring to a boil and then simmer until thick.



5. Cut meat into thin slices and place on bottom side of buns. Drizzle sauce on top and cover with the other half.



6. Serve and enjoy!
