Cucumbers with Almonds

Slivered almonds 1 Ounce (2 Tablespoon)
Scallions 2
Kirby cucumbers 4 Small
Olive oil 2 Tablespoon
Red wine vinegar 1 Tablespoon
Ground cumin 1/2 Teaspoon



1) In toaster over, toast almonds to golden brown.

2) Chop scallions.

3) Scrub cucumbers but do not peel and slice them into 1/4- inch thick rounds.


4) In a bowl large enough to hold the salad, combine oil, vinegar and cumin.

5) Mix everything well.

6) Add cucumbers, scallions and almonds to dressing and toss to coat well.


7) Serve the salad in main course meal.
