Lemon Meringue Pie is a classic! Try my version out, its so delicious :)

Ingredients

For lemon filling:
Water 1/2 Cup (8 tbs)
Lemon juice 2/3 Cup (10.67 tbs)
Lemon rind 1/4 Cup (4 tbs)
Caster sugar 1/2 Cup (8 tbs)
Slurry 1/2 Cup (8 tbs) (water mixed with 1 tbls corn flour)
Egg yolks 3
For pastry:
Plain flour 1 2/3 Cup (26.67 tbs)
Cold butter 150 Gram
Lemon rind 1 Tablespoon
Icing sugar 1/4 Cup (4 tbs)
Iced water 1 Tablespoon
For meringue:
Egg whites 1/2 Cup (8 tbs)
Caster sugar 1/2 Cup (8 tbs)
