Small red potatoes 1 Kilogram , boil (cooled and diced)
Small red onion 1 , finely chopped
Hard boiled eggs 2 , chop
Chopped chives 2 Tablespoon (plus extra for garnish)
Mayonnaise 1/2 Cup (8 tbs)
Dijon mustard 2 Teaspoon (mild, or mustard of your choice)
Freshly squeezed lemon juice 3 Tablespoon
Smoked paprika 1/4 Teaspoon
Salt To Taste
Black pepper To Taste
