Vegetable oil | 4 Tablespoon | |
Ghee | 2 Tablespoon | |
Red onions | 200 Gram , slice | |
Whole chicken | 1 Small (with bones cut into half) | |
Long grain rice | 400 Gram | |
Water | 1 1/2 Cup (24 tbs) | |
Salt | 1 Tablespoon | |
Orange zest strip | 2 | |
Cardamom seeds | 1/2 Tablespoon | |
Yellow lemons | 1 (or dried black lime) | |
Cinnamon powder | 1/2 Teaspoon | |
Crushed clove | 1/4 Teaspoon | |
Tomato puree | 2 Cup (32 tbs) | |
For garnish: | ||
Orange | 1/2 , wedged | |
Almonds | 1/3 Cup (5.33 tbs) , fry | |
Raisins | 1/3 Cup (5.33 tbs) , fry | |
Mint leaves | 2 Tablespoon |
MAKING:
1.In a pan, heat oil and ghee. Add and roast almonds for a minute. Transfer to a bowl.
2. In the same oil and ghee mixture, fry the raisins until they puff up like balloons. Transfer to a bowl.
3. Again, in the same oil and ghee mixture, fry onions on a high flame for a minute.
4.Once the onions start turning golden brown add the chicken and sear it.
5.Then add tomato puree, green cardamom, cloves, cinnamon powder, orange zest , whole lemon, salt, water and cook covered with a lid for a minimum of 15 minutes.
6.Heat ghee in another pan and transfer the cooked chicken to it and pan sear on a high flame until charred.
7.Now add rice to the gravy and cook on a high flame for 10 mintues. Once the water on top is dried up, lower the flame and cook covered with a lid for 15 minutes.
SERVING:
8.Assemble and garnish as shown in the video and serve.
