Kerala Style Vegetable Stew is easy to make, light on stomach, simple yet delicious on taste and absolutely healthy. Ideally it goes well with appams, but if you can't have it with appams, you can have it with steamed rice and it tastes yum!

Potatoes | 2 Medium , peeled (cubed) | |
Cauliflower florets | 1 Cup (16 tbs) | |
Chopped french beans | 1 Cup (16 tbs) (cut into 1”) | |
Onions | 2 Medium , slice | |
Green chillies | 5 , finely chopped | |
Ginger paste | 1 Tablespoon | |
Garlic paste | 1 Tablespoon | |
Peppercorns | 10 | |
Cinnamon stick | 1 Inch | |
Cardamoms | 4 | |
Coconut milk | 2 1/2 Cup (40 tbs) | |
Cashews | 1/4 Cup (4 tbs) , soaked (ground to a paste) | |
Curry leaves | 10 | |
Salt | To Taste | |
Coconut oil | 2 Tablespoon | |
Water | 1/2 Cup (8 tbs) |
MAKING:
1.Heat oil and add the splutter the spices. Add the onions, chillies and ginger garlic paste and sauté till the onions turn pink. Add the vegetables and little water, salt and cook till the vegetables are done.
2.Then add the thick coconut milk, cashew nut paste and boil the curry

3.Garnish with the curry leaves and serve with appams or steamed rice.
