|Baby potatoes||2 Packet|
|Mustard oil||4 Tablespoon|
|Cinnamon stick||1 Inch|
|Asafoetida||1/4 Teaspoon (dissolved in 1 tsp of water)|
|Ginger powder||1 Teaspoon|
|Fennel powder||1 Teaspoon|
|Red chilli powder||2 Teaspoon|
|Black cardamom||1 (coarsely pounded)|
|Oil||3 Cup (48 tbs) (for frying the potatoes)|
|Water||2 Cup (32 tbs)|
1.With a toothpick prick the boiled baby potatoes.
2.In a saucepan heat some oil then fry the baby potatoes until they turn golden in colour.
3.Once they are cooked place them on tissue paper, to get rid of excess oil.
4.Heat a pan and add mustard oil to it.
5.Once the mustard oil smokes, add bay leaf, cloves and cinnamon fry it for few seconds and then add hing.
6.Turn off the flame and add red chilli powder, curd and some water.
7.Stir it continuously.
8.Add dry ginger powder, fennel seeds powder along with black cardamom and salt.
9.Cover the pan with lid and let it boil.
10.Now add the fried potatoes and cover it with lid and let it cook for 5 minutes.
11. Kashmiri Dum Aloo is ready to be served.
