A traditional gujarati savory cake made with rice, lentils(or instant version with Soji Besan) and lots of vegetable like bottle gourd, fenugreek leaves and carrots. ... The key ingredient in this recipe is the dudhi/lauki/bottle gourd that gives the cake a super moist texture. But when the bottle gourd is not available, I love to use Zucchini


For batter :
Semolina 1 Cup (16 tbs) (sooji / rawa)
Besan 1/4 Cup (4 tbs)
Sugar 1/2 Tablespoon (optional)
Salt To Taste
Yogurt 1/2 Cup (8 tbs) (dahi)
Oil 2 Tablespoon
Finely chopped green chili 1 Teaspoon
Finely chopped ginger 1 Teaspoon
Water 1/4 Cup (4 tbs)
Oil spray 4 Dash
Curry leaves 14
Sliced zucchini 1/2 Cup (8 tbs)
Chopped cabbage 1/2 Cup (8 tbs)
Coriander cumin powder 1 Teaspoon
Turmeric 1/4 Teaspoon
Baking powder 1/2 Teaspoon
Ground peanuts 1/4 Cup (4 tbs)
Sesame seeds 1 Teaspoon
For tempering:
Oil 2 Tablespoon
Mustard seeds 1 Teaspoon
