Like all Thai food lovers, Im obsessed. From Red to Green curry, Satay Panang to Khao Soi, Ive made and relished it all. When I heard of Pad Kaprow Gai or Pad Gra Pow, I was fascinated as Im a huge fan of Basil. This dish compared to some of my other Thai dishes is very easy to put together and does not use a lot of ingredients.
Garlic | 12 Clove (60 gm) | |
Red finger chilies | 1 | |
Red thai chilies | 5 | |
Salt | 1 Teaspoon | |
Boneless chicken thigh | 500 Gram (1 lb) | |
Oyster sauce | 1/4 Cup (4 tbs) | |
Light soya sauce | 2 Tablespoon | |
Fish sauce | 1/2 Tablespoon | |
Thai basil leaves | 1 Cup (16 tbs) | |
White peppercorns | 1 Teaspoon | |
Egg | 1 (for serving) | |
Cooked rice | 1 Cup (16 tbs) (for serving) |
MAKING:
1.Crush the peppercorns, garlic and red chillies in a mortar and pestle.
2.Cut the Chicken into a small dice.
3.Heat some oil in a wok and saute the crushed peppercorns, garlic and chilli.
4.Add the Chicken and saute till it’s nice and caramelized.
5.Add the oyster, soya and fish sauce.
SERVING:
6.Add the basil and serve with rice and a fried egg.
