who says delicious tacos have to take hours to prepare?! No way. These AMAZING chicken tacos are topped off with an easy avocado cilantro crema and mango!
For chicken: | ||
Chicken tenderloins/Chicken breast | 1 Pound (cut into pieces) | |
Ground cumin | 1 Tablespoon | |
Ground coriander | 3 Teaspoon | |
Chilli powder | 1 Tablespoon | |
Salt | To Taste | |
Pepper | To Taste | |
For crema topping: | ||
Plain greek yogurt | 3/4 Cup (12 tbs) | |
Chopped cilantro | 1/2 Cup (8 tbs) | |
Lime zest | 1 Teaspoon | |
Lime | 1/2 , juiced | |
Avocado | 1/2 | |
For topping: | ||
Mango | 1 , slice | |
Avocado | 1/2 , slice | |
Chopped cilantro | 1 Tablespoon |
MAKING:
1.Preheat a griddle pan or large skillet over medium high heat. Add a little grapeseed oil.
2.In a bowl add the chicken pieces.
3.To the chicken add the ground cumin, coriander, chili powder, salt, and pepper. Toss to coat the chicken completely.
4.Add the chicken, cooking about 5-7 minutes, until all of the chicken is cooked through.
5.While the chicken is cooking make the crema topping. In a small bowl add the Greek yogurt, chopped cilantro, lime zest, lime juice, and avocado. With a fork smush it all together until combined and set aside.
6.Once the chicken is cooked completely it's time to assemble.
7.On a tortilla add the cooked chicken, then top it off with sliced avocado, sliced mango, a big dollop of the crema, and chopped cilantro.
