Who doesn't love a salad packed with delicious Summer fruit. Take advantage of the seasons bounty with this easy and fresh salad. Your taste buds will thank you!
|Spinach||3 Cup (48 tbs)|
|Fresh bluberries||1/4 Cup (4 tbs)|
|Diced mango||1/4 Cup (4 tbs)|
|Whole raw almonds||1/4 Cup (4 tbs) , chop|
|Crumbled feta cheese||1/4 Cup (4 tbs)|
|Lemon||1/2 , juiced|
|Fresh grated ginger||1 Teaspoon|
|Dijon mustard||1 Teaspoon|
|Grapeseed oil||1/4 Cup (4 tbs)|
1.In a bowl add the spinach.
2.To the top of the spinach add the strawberries, blueberries, mango, almonds, and feta cheese (or any other fresh fruit you'd like!).
3.In a small bowl add the lemon juice, grated ginger, dijon mustard, honey, and sprinkle of salt and pepper.
4.Whisk together until the honey dissolves
5.While whisking, slowly add in the oil until combined. Pour over the salad, toss, and serve!
